Takeshi Saji: A Legend of Takefu Knife Village

The name Takeshi Saji is synonymous with Takefu Knife Village. As one of the founding members, alongside other legendary figures like Katsushige Anryu and the late Masami Asai, Saji-san has helped shape the world of high-quality kitchen knives. His work spans various lines, with his flagship being the blue (aogami) #2 steel rainbow Damascus line.

The eye-catching rainbow Damascus, characterized by intermittent layers of copper, brass, and nickel, is why this line bears its name. For an even more striking contrast, some enthusiasts even apply a coffee etch to these layers, enhancing their visual impact.

The 210mm gyuto is a favorite among both home cooks and professional chefs, balancing versatility with precision. It's the perfect size for a range of kitchen tasks, akin to a well-fitting shoe that accommodates a thicker sock without compromising comfort.
