Don't forget these...
Most knives do not come tuned to their full potential. Zach Peters has been sharpening knives by hand for over 18 years. He is a purist, and prefers sharpening only on water based Japanese whetstones. Because every blade is a little bit different, freehand sharpening by an expert can bring it to its full potential, and a Zach Peters edge is truly a special experience.
