Don't forget these...

From Tosa Japan, third generation blacksmith Kosuke Muneishi makes knives that are of impressive quality, at an approachable price point. The Tosa typical kurouchi finish and his specializing in blue (Aogami) steels, are really what define his work.

This series of knives is made out of blue (Aogami) steel #2. The benefits of blue steel #2 compared to #1 are its increased toughness mainly. Making this steel choice more suitable for those that have "whoopsies" moments on the cutting board, or cut through harder produce. Its contrasting property, you can expect less rust resistance on blue steel #2 compared to #1.

Some knife style definitions aren't worth reinventing, and this is the case with the santoku. Santoku translates to knife of three virtues [slice, dice, chop]. Though a santoku is suitable for just about anyone as a very multi-purpose knife, those that like to rock chop or have limited space in the kitchen will particularly enjoy this knife style.
