Don't forget these...
The Dao Vua Cooperative is a very unique company. The Vietnamese Blacksmith tradition began in 1288, and has evolved into a secretive 22 step process to create these knives. A group of young entrepreneurs have combined these skills with that of woodcraft to include beautiful hardwood handles and sayas. These knives are made with German monosteel from leaf springs.
The V2 version is extraordinary. You simply will not find a better handmade knife at this price. Blades are straight, thin, and sharp, guaranteed! This is a carbon steel knife with 50 / 50 grind, very thin, light and sharp. The ebony and padauk handles are the superbly refined, and DaoVua have come a long way from project knives. In my opinion, for the price of a handmade carbon knife, they are at the top of the list.
