Takamura Chromax Santoku – Laser Sharp Performance

There's legendary blacksmithing, and then there's the artistry of Terukazu Takamura. Beloved by Michelin-starred chefs like René Redzepi (Noma) and Massimo Bottura (Osteria Francescana), Takamura knives offer superb craftsmanship at any price point.

The Chromax line is renowned for its remarkable performance. Here's why:

  • Steel: Chromax steel, hardened to HRC 64-65 for incredible edge retention and superior durability compared to similar R2 knives.
  • Reactivity: Significantly less reactive than carbon steel.
  • Grind: Laser-thin, similar to a stainless-clad Aogami Super, providing unmatched cutting performance.
  • Finish: Hand-hammered finish adds a sophisticated touch.

Chromax is one of my personal favorite steels. It has properties and hardness close to Aogami Super, but has better stain resistance- this is semi - stainless and the edge will patina over time. We recommend you add a strop and 2 micron strop shots  with the knife to touch it up, the extremely hard steel will stay sharp for a very long time with simple strop touch ups from time to time.
