Moritaka Knives 180mm Tall Nakiri

The Tall Nakiri made by Moritaka Hamono combines the functionality of a Chinese cleaver and a classic nakiri, providing exceptional value without the weight of larger cleaver. Crafted in Yatsushiro, Japan, this knife boasts a remarkable HRC rating of 65 and is made using the traditional hammer forging technique. The combination of Aogami Super core steel and soft iron cladding ensures minimal carbon migration, resulting in enhanced cutting performance and easy sharpening. With its kurouchi finish and octagonal walnut handle, this knife is not only a pleasure to use but also a stunning addition to any kitchen. Moritaka is famous for their flat profile on their nakiri knives, perfect for push cutting. Frankly, they make my favorite nakiri. For the best out of the box experience, we recommend adding on our professional sharpening service.

Great knife if you're looking for a larger nakiri.

I have several Moritaka knives and this is another great choice. They aren't flashy, but the steel treatment holds up and the Aogami Super steel is outstanding for sharpness and edge retention. Great craftsmanship.

Handle is comfortable and standard shape, size. Fitment of handle done well.

Were I feel the 180mm size shines is when doing quantity vegetable prepping/chopping. Just a bit more blade length than the default 165mm, without much more weight penalty. The added blade height can help with hand/knuckle clearance to not bump, smash your knuckles.

Only possible negative is fitting in some knife blocks. The blade height might not allow fitment in some slots. So measure before hand if that's a concern.
